triple chocolate pecan cookies

These cookies can only be described as chocolate chip cookies on steroids.  They are so good, so pretty and very easy!



Triple Chocolate Pecan Cookies
recipe adapted from Great Cookies by Carole Walters

4 oz milk chocolate
4 oz white chocolate
4 oz semisweet chocolate
2 2/3 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick butter
3/4 cup packed dark brown sugar
3/4 cup granulated sugar
2 eggs
2 teaspoons vanilla extract

Heat oven to 375 degrees.  Cut chocolate into 1/2 inch chunks.  Sift together flour, baking soda, baking powder and salt - set aside.

Cream butter.  Add dark brown sugar.  Add granulated sugar.  Add eggs, one at a time.  Add vanilla.

Fold in dry ingredients in three additions.  Fold in chocolate chunks.

Spoon 1 1/4 tablespoon mounds onto an ungreased baking sheet.  Mounds should be at least 3 inches apart (they spread a lot!).

Bake 10-12 minutes - cookies tops should be set and the edges slightly browned.

Remove cookies from the oven and let cool for 2 to 3 minutes.  Transfer to cooling rack.

These cookies can be frozen!!
